Ashish's Kitchen: My Sisters, Aubergine Pizzas (Flash Recipe)

Start off with cutting your aubergines in circles, making sure not to cut them too thin. Afterwards, move them to medium/large baking tray. Once on the tray, drizzle with a little olive oil, some salt and chilli flakes and/or peri peri flakes. Next, cook on a medium heat for 15 minutes (preferably place at the bottom of your oven at 150 0r 180 degrees gas mark). After 15 minutes has passed, take your aubergines out of the oven and start to slowly construct your pizzas. First, spread a little tomato puree on each aubergine. Then add either basil or baby spinach after you've applied the tomato puree to each aubergine slider.

Finish off, with placing small chunks or slices of chorizo or parma ham to each aubergine (on top of the basil or baby spinach). After you have done this, add a handful of cheese all over your aubergine slices. For extra heat, cut up some fresh red or green chillies (which you can sprinkle on top). Place your tray back in the oven (on the top or middle shelf) for about 5-8 mins on a higher heat than before (i.e 200 degrees gas mark). As soon as the cheese has melted and your aubergines have browned a little. Start to plate up your aubergine pizzas. Note: This dish can be accompanied by some simple potato wedges or can be eaten simply be eaten on it's own. One other way it can be served is on Ryvita flatbreads with a small drizzle of garlic oil.
