Ash's Kitchen: Vegetarian Shepard's Pie

Start by cutting up some carrots, leek, mushrooms. Once prepped, move all to heated pan (with a little oil). Start to cook on a low heat, upon doing so add in some chopped onions and garlic and chopped fresh chilli (with a pinch of salt). Once mixed, add in some drained lentils and some drained berlitto beans. Next, add a few tablespoons of some tomato puree or add in some 'stir in garlic and tomato sauce' (pre-made)

As soon as you have let everything cook for a few minutes on a low heat, start to place all on a baking tray. Once poured in, top your vegetables with grated parmesan and grated potato or grated sweet potato (pre boil before hand). Cook for about 20-25 minutes on 180 degrees gas mark. Once your topping is golden, serve up and enjoy.
